Apple Bread

Ingredients:

  • 1 cup oil
  • 3 eggs
  • 2 cups sugar
  • 1 tsp vanilla
  • 3 cups apples, diced
  • 3 cups flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
Instructions:
  • Grease and flour 2 regular loaf pans.  Preheat oven to 325 degrees.
  • Mix oil, eggs, sugar, and vanilla.  In a separate bowl, combine flour, cinnamon, soda, and salt.  Add dry ingredients to first mixture.  Fold in apples.  Pour batter into pans.
  • Bake 70 minutes or until center of loaf springs back when pressed gently with finger.
  • Cool by setting pan on its side for 10 minutes on a wire rack.  Remove bread from pan and place right-side-up on wire rack until completely cooled.
