Apple Bread
Ingredients:
- 1 cup oil
- 3 eggs
- 2 cups sugar
- 1 tsp vanilla
- 3 cups apples, diced
- 3 cups flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
Instructions:
- Grease and flour 2 regular loaf pans. Preheat oven to 325 degrees.
- Mix oil, eggs, sugar, and vanilla. In a separate bowl, combine flour, cinnamon, soda, and salt. Add dry ingredients to first mixture. Fold in apples. Pour batter into pans.
- Bake 70 minutes or until center of loaf springs back when pressed gently with finger.
- Cool by setting pan on its side for 10 minutes on a wire rack. Remove bread from pan and place right-side-up on wire rack until completely cooled.
