Parmesan-Crusted Chicken Penne
Ingredients:
- 6 servings penne
- 2-3 boneless, skinless chicken breasts, cut into strips
- 1 1/2 cups breadcrumbs
- 3 TBS flour
- 1/2 cup grated parmesan
- 1 cup milk
- 6 TBS butter
- 1/2 cup olive oil
- 6 TBS flour
- 2 tsp. garlic
- 1 cup water
- 1 tsp. salt
- 1/2 cup sour cream
- 2 cups half-n-half
- Mozzerella cheese
- Cook pasta according to package instructions
- Mix breadcrumbs, flour, and parmesan in a bowl. Dip the chicken strips into the breadcrumb mixture, then into the milk, and then back into the breadcrumb mixture. Saute the strips in olive oil.
- Melt butter in a saucepan; add olive oil. Whisk in flour. Add garlic, water, and salt until blended. Mix in sour cream and half-n-half until smooth.
- Toss the pasta with the white sauce. Top with chicken and mozzerella cheese.
