Feather-Light Muffins
Ingredients:
- Muffins:
- 1/3 cup butter
- 1/2 cup sugar
- 1 egg
- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/2 cup milk
- Topping:
- 1/2 cup sugar
- 1 tsp. ground cinnamon
- 1/2 cup butter or margarine, melted
- Preheat oven to 325 degrees.
- In a mixing bowl, cream butter, sugar, and egg. In a separate bowl, combine dry ingredients. Add to creamed mixture, alternating with milk.
- Fill greased muffin tins 2/3 full.
- Bake 20-25 minutes or until golden. Allow to cool on wire racks 3-4 minutes.
- Meanwhile, combine sugar and cinnamon in a small bowl. Roll the warm muffins in the melted butter and then in the sugar mixture. Serve warm!
