Healthful Carrot Apple Muffins
Ingredients:
- 1 1/4 c whole wheat flour
- 1/4 c brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1 c grated carrots
- 1/2 c unsweetened applesauce
- 2 eggs
- 1/4 c milk
- 1/4 c canola oil
- 1 tsp vanilla
Instructions:
- Preheat oven to 350. Line muffin tin with muffin papers.
- In a large bowl, combine dry ingredients. In a separate bowl, combine remaining ingredients. Gradually add the carrot mixture to the flour mixture, stirring just until blended.
- Spoon batter into muffin cups and bake about 20 minutes.
