Cereal

Ingredients:

  • 6 c rolled oats
  • 1/2 c oil (whatever you prefer...ie., vegetable oil, peanut butter, melted coconut oil, applesauce, etc.)
  • 1 tsp sea salt
  • 1/2 c honey
  • 1/2 c raisins
  • 1/2 c sunflower seeds
  • 1/2 c wheat germ
  • 1/2 c dates
  • 1/2 c sliced almonds
Instructions:
  • Preheat oven to 325 degrees.
  • Mix all ingredients in jelly roll pan.  Spread evenly.
  • Bake for 15-20 minutes at a time, stirring/turning at intervals.  Usually takes about an hour to bake to a nice golden color.  Allow to cool in pan on wire rack before storing in an air-tight container.

Chewy Healthful Granola Bars

Ingredients:

  • 2 c rolled oats
  • 3/4 c packed brown sugar
  • 1/2 c wheat germ (if you don't have any, just use that much more oats)
  • 3/4 tsp ground cinnamon
  • 1 c whole wheat flour
  • 3/4 c dried cranberries (or raisins, if you prefer)
  • 3/4 tsp salt
  • 1/2 c honey
  • 1 egg, beaten
  • 1/2 c applesauce or pumpkin puree
  • 2 tsp vanilla extract
Instructions:
  • Preheat oven to 350.  Grease 9x13 pan.
  • In a large bowl, mix dry ingredients (including the cranberries).  Make a well in the center and pour the honey, egg, applesauce, and vanilla inside.  Mix well.  
  • Pat mixture evenly into pan.  Bake for 30-35 minutes, until bars begin to turn golden around the edges.  Cool 5 minutes on wire rack, then cut into bars. Remove from pan and allow to finish cooling on wire rack.  Store in airtight container.

Pumpkin Spice Granola

Ingredients:

  • 3 1/2 cups rolled oats
  • 2 1/2 cups puffed rice
  • 1 TBS pumpkin pie spice
  • 3/4 tsp salt
  • 3/4 c brown sugar
  • 1/2 c pumpkin puree
  • 1/4 c applesauce
  • 1/4 c maple syrup
  • 1 tsp vanilla extract
  • 1 c dried cranberries
  • 1 c unsweetened coconut flakes
  • 1 c slivered almonds
Instructions:
  • Preheat oven to 325.  Spray jelly roll pan generously with cooking spray.
  • In a large bowl, combine oats & puffed rice.
  • In a medium bowl, combine the remaining ingredients except the cranberries, coconut, and almonds. Whisk until smooth.
  • Pour wet ingredients over dry ingredients.  Fold together until well-coated.  
  • Spread in pan in an even layer.  Bake 30 minutes.  Using a large spatula, turn the granola over.  Sprinkle with cranberries, coconut, and almonds.  Bake an additional 15 minutes.  If necessary, flip the granola again and bake 10-15 more minutes.  The granola around the edges may get done sooner than the rest, so remove that if necessary.  
  • Allow granola to cool, then break up and store in an airtight container.
