Chocolate Chip Banana Bread

Ingredients:

  • 4 oz butter (1 stick), softened
  • 1 cup sugar
  • 1 1/2 cups mashed bananas
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
Instructions:
  • Grease and flour 9"x5"x3" loaf pan.
  • Preheat oven to 325 degrees.
  • Cream butter and sugar.  Beat in mashed bananas, eggs, and vanilla.
  • In a separate bowl, combine dry ingredients.  Stir into first mixture just until moistened.  Fold in chocolate chips.  
  • Pour butter into prepared pan.  Bake 60-70 minutes, or until the middle springs back when gently pressed with finger.
  • Cool pan on its side on a wire rack for 10 minutes.  Remove bread from pan and place right-side-up on wire rack and allow to cool completely.
