Chocolate Chip Banana Bread
Ingredients:
- 4 oz butter (1 stick), softened
- 1 cup sugar
- 1 1/2 cups mashed bananas
- 2 eggs
- 2 tsp vanilla extract
- 2 cups flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions:
- Grease and flour 9"x5"x3" loaf pan.
- Preheat oven to 325 degrees.
- Cream butter and sugar. Beat in mashed bananas, eggs, and vanilla.
- In a separate bowl, combine dry ingredients. Stir into first mixture just until moistened. Fold in chocolate chips.
- Pour butter into prepared pan. Bake 60-70 minutes, or until the middle springs back when gently pressed with finger.
- Cool pan on its side on a wire rack for 10 minutes. Remove bread from pan and place right-side-up on wire rack and allow to cool completely.
