Pumpkin Chocolate Chip Cookies

Ingredients:

  • 1/2 c. margarine or shortening, softened
  • 1 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 1/2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 c. pumpkin
  • 1 12-oz. pkg. chocolate chips
Instructions:
Preheat oven to 375*.
Cream butter and sugar for at least 3 minutes. Meanwhile, combine dry ingredients in a separate bowl.
Add egg and vanilla to butter/sugar mixture. Mix in dry ingredients, alternating with the pumpkin. Stir in chocolate chips.
Drop onto cookie sheets. Bake 12-15 minutes.

Hey Jen. These are amazing! I made them for the first time last night! SO YUMMY! They are very moist, and would probably be good with Cranberries subed for the chocolate chips. :)
